Scale
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 cup melted butter

  2. In a large bowl, mix flour, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together eggs and sugar, then add milk, melted butter, and vanilla.
  4. Combine wet and dry ingredients until lumpy.
  5. Pour half of the batter into a loaf pan, layer with half the apples and some cinnamon sugar, then the rest of the batter.
  6. Top with remaining apples and sprinkle with cinnamon sugar.
  7. Bake for about 55 minutes or until the top is crisp and the center is set.
  8. Cool for at least 20 minutes before slicing.
