Description

Delicious pancakes with warm apple rings that melt in your mouth, combining the joys of breakfast and dessert.


Ingredients

  • 2 good-sized apples
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 egg
  • 3/4 cup milk
  • 1 teaspoon baking powder
  • Pinch of salt
  • Butter or oil (for frying)
  • Optional: a pinch of cinnamon or nutmeg

Instructions

  1. Peel the apples (optional), core them and slice into thick rings (about a quarter inch thick).
  2. In a big bowl, mix together the flour, sugar, baking powder, and salt.
  3. Crack in the egg and pour in the milk, then mix until combined (lumps are fine).
  4. Heat a pan on medium and add some butter or oil.
  5. Dunk apple rings in the pancake batter until fully coated, then place them in the pan.
  6. Fry for about two minutes per side until golden and puffy.
  7. Serve hot, with optional toppings such as butter, maple syrup, powdered sugar, or whipped cream.

Notes

Let the batter sit for 5 minutes for extra fluffiness. Keep early batches warm in the oven if cooking for a group. Leftovers can be toasted.
