- 2 good-sized apples
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 egg
- 3/4 cup milk
- 1 teaspoon baking powder

Instructions
- Peel the apples (optional), core them and slice into thick rings (about a quarter inch thick).
- In a big bowl, mix together the flour, sugar, baking powder, and salt.
- Crack in the egg and pour in the milk, then mix until combined (lumps are fine).
- Heat a pan on medium and add some butter or oil.
- Dunk apple rings in the pancake batter until fully coated, then place them in the pan.
- Fry for about two minutes per side until golden and puffy.
- Serve hot, with optional toppings such as butter, maple syrup, powdered sugar, or whipped cream.
Notes
Let the batter sit for 5 minutes for extra fluffiness. Keep early batches warm in the oven if cooking for a group. Leftovers can be toasted.
