- 2 large cucumbers
- 1/4 cup rice vinegar
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon sugar or honey
- 1 teaspoon chili oil (optional)

Instructions
- Spiral cut the cucumbers using chopsticks to guide your knife.
- Salt the cucumbers and let them rest for 10 minutes to draw out moisture.
- Rinse the cucumbers and set aside.
- In a bowl, mix together rice vinegar, soy sauce, sesame oil, minced garlic, sugar, and chili oil.
- Toss the cucumbers in the dressing until well coated.
- Serve immediately or chill for a refreshing snack.
