These mini lemon pies are a magical dessert that create their own crust while baking, perfect for any occasion.

- 1 can (14 oz) sweetened condensed milk
- 3 large eggs
- 1/2 cup melted butter
- 2 tsp lemon zest
- 1/4 cup fresh lemon juice
- 1/4 cup sugar
- 1/4 cup all-purpose flour
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and prepare a muffin tin with silicone liners.
- In a large bowl, combine sweetened condensed milk, eggs, melted butter, lemon zest, lemon juice, sugar, flour, and salt.
- Whisk until smooth without any clumps.
- Spoon the mixture into the muffin tin, filling each cup about halfway.
- Bake for 15-20 minutes, or until lightly golden and firm in the center.
- Allow to cool before removing from the muffin tin.
Notes
Let pies chill in the fridge for an hour for a denser texture. These can be stored in an airtight container for a couple of days.
