Description

This delicious banana walnut soda bread is a quick and easy alternative to traditional banana bread, topped with a creamy date butter for a unique twist.


Ingredients

  • 2 very ripe bananas
  • 2 cups flour
  • 1/3 cup brown sugar (packed)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup walnuts, chopped
  • 1 egg
  • 1/2 cup plain yogurt or buttermilk
  • 1/4 cup melted butter
  • 1 cup chopped dates, pitted
  • 1/4 cup hot water
  • Pinch of salt
  • 1/2 cup soft butter

Instructions

  1. Mash the bananas in a large bowl until mushy.
  2. Add the egg, brown sugar, yogurt, and cooled melted butter to the mashed bananas and mix well.
  3. In another bowl, combine the flour, baking soda, and salt, then fold the dry ingredients into the banana mixture without overmixing.
  4. Gently fold in the walnuts.
  5. Pour the batter into a buttered loaf pan.
  6. Bake at 350°F for 40-45 minutes until golden brown on top.
  7. For the date butter, soak the dates in hot water for 10 minutes, mash them into a paste, and then mix with soft butter and salt.
  8. Slice the warm bread and serve with date butter on top.

Notes

This bread freezes well, making it a perfect emergency comfort food. For a gourmet touch, add extra walnuts on top or layer with Peach Tomato Jam.
