Description

A rich and creamy butterscotch pie with a flaky crust, topped with whipped cream and optional pecans.


Ingredients

  • 1 flaky pie crust (store-bought or homemade)
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1 cup cream
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Whipped cream for topping
  • Chopped pecans or shaved chocolate (optional)

Instructions

  1. Preheat your oven and prepare your pie crust.
  2. In a saucepan, melt the butter over medium heat.
  3. Add brown sugar and let it bubble, stirring continuously.
  4. Pour in the cream and stir, allowing it to simmer gently.
  5. Whisk in the egg yolks slowly, ensuring not to scramble them.
  6. Return the mixture to the heat and stir until thickened, coating the back of a spoon.
  7. Remove from heat and stir in vanilla and salt.
  8. Allow the filling to cool slightly before pouring it into the baked crust.
  9. Refrigerate until set, then top with whipped cream and optional toppings before serving.

Notes

For added flavor, stir in some vanilla or a splash of bourbon into the whipped cream topping.
