Ingredients

- 1 whole chicken or 2 chicken thighs
- 1 handful chopped carrots
- 1 handful chopped celery
- 1 handful chopped onion
- 2 garlic cloves (optional)
- Salt to taste
- Pepper to taste
- Dried herbs (thyme or parsley)
- Water to cover
- Egg noodles or rice (optional)
Instructions
- In a large pot, place the chicken and add the chopped carrots, celery, onion, and garlic.
- Season with salt, pepper, and herbs, then cover with water.
- Bring to a simmer and cook for about 45 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Add the egg noodles or rice if using and stir well.
- Adjust seasoning as desired and serve hot.
Notes
For extra flavor, squeeze a lemon wedge in before serving. Soup flavors deepen overnight, making it even better the next day.
