Description

Comforting Chicken Soup that’s perfect for cold days and healing. Easy to make with simple ingredients.


Ingredients

Scale
  • 1 whole chicken or 2 chicken thighs
  • 1 handful chopped carrots
  • 1 handful chopped celery
  • 1 handful chopped onion
  • 2 garlic cloves (optional)
  • Salt to taste
  • Pepper to taste
  • Dried herbs (thyme or parsley)
  • Water to cover
  • Egg noodles or rice (optional)

Instructions

  1. In a large pot, place the chicken and add the chopped carrots, celery, onion, and garlic.
  2. Season with salt, pepper, and herbs, then cover with water.
  3. Bring to a simmer and cook for about 45 minutes.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Add the egg noodles or rice if using and stir well.
  6. Adjust seasoning as desired and serve hot.

Notes

For extra flavor, squeeze a lemon wedge in before serving. Soup flavors deepen overnight, making it even better the next day.
