Description

A comforting coffee cake that combines the classic flavors of coffee cake with the cinnamon goodness of a cinnamon roll, topped with cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 1 cup milk, room temperature
  • 2 large eggs, room temperature
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 cup brown sugar
  • 1/4 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs and vanilla, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk.
  6. Pour half of the batter into the prepared pan.
  7. In a small bowl, mix together the brown sugar and cinnamon for the filling.
  8. Drop spoonfuls of the filling over the batter and swirl it lightly with a knife.
  9. Add the remaining batter on top and repeat the swirling process.
  10. Bake for 30-35 minutes or until a toothpick comes out clean.
  11. For the frosting, combine cream cheese, powdered sugar, and heavy cream until smooth.
  12. Allow the cake to cool before drizzling the frosting on top.

Notes

Let the coffee cake cool for at least 30 minutes before frosting. Store it covered at room temperature for up to 2-3 days, or refrigerate if frosted.
