Description

A simple and delicious homemade broccoli soup packed with fiber to keep you feeling full and satisfied.


Ingredients

  • 2 cups broccoli florets
  • 1 cup vegetable broth
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup milk (or plant-based alternative)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: croutons, shredded cheese

Instructions

  1. Heat olive oil in a pot over medium heat. Add diced onion and garlic, sautéing until softened.
  2. Add broccoli florets and vegetable broth. Bring to a boil, then simmer for 15 minutes.
