- 1 pound shrimp, peeled and deveined
- 1/2 cup pineapple juice
- 1/4 cup coconut milk
- Zest of 1 lime
- 2 cups pineapple chunks (fresh or canned)
- 1/4 cup coconut cream
- 1 clove garlic, minced
- 2 tablespoons lime juice
- 1/2 teaspoon chili flakes (optional)
- 8 corn tortillas
- 1 cup cabbage, shredded
- 1/2 red onion, sliced
- Fresh cilantro (optional)
- Grilled pineapple or fresh mango chunks (optional)
- Lime wedges for serving
Instructions
- Marinate the shrimp in pineapple juice, coconut milk, and lime zest for at least 30 minutes.
- In a saucepan, combine pineapple chunks, coconut cream, garlic, and lime juice. Simmer and blend until smooth.
- Cook the marinated shrimp in a hot pan for about 5 minutes until golden and cooked through.
- Warm the corn tortillas over a burner for a few seconds on each side.
- Assemble the tacos by placing shrimp in the tortillas, adding Piña Colada sauce, and topping with cabbage, red onion, and cilantro.
- Finish with a squeeze of fresh lime and any additional toppings.
Notes
For a thicker sauce, reduce it more on the stove. Adjust toppings as per your preference for flavors.
