Description

Enjoy a tropical twist with these refreshing Piña Colada Shrimp tacos, coated in a sweet pineapple and coconut sauce and topped with vibrant ingredients.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/2 cup pineapple juice
  • 1/4 cup coconut milk
  • Zest of 1 lime
  • 2 cups pineapple chunks (fresh or canned)
  • 1/4 cup coconut cream
  • 1 clove garlic, minced
  • 2 tablespoons lime juice
  • 1/2 teaspoon chili flakes (optional)
  • 8 corn tortillas
  • 1 cup cabbage, shredded
  • 1/2 red onion, sliced
  • Fresh cilantro (optional)
  • Grilled pineapple or fresh mango chunks (optional)
  • Lime wedges for serving

Instructions

  1. Marinate the shrimp in pineapple juice, coconut milk, and lime zest for at least 30 minutes.
  2. In a saucepan, combine pineapple chunks, coconut cream, garlic, and lime juice. Simmer and blend until smooth.
  3. Cook the marinated shrimp in a hot pan for about 5 minutes until golden and cooked through.
  4. Warm the corn tortillas over a burner for a few seconds on each side.
  5. Assemble the tacos by placing shrimp in the tortillas, adding Piña Colada sauce, and topping with cabbage, red onion, and cilantro.
  6. Finish with a squeeze of fresh lime and any additional toppings.

Notes

For a thicker sauce, reduce it more on the stove. Adjust toppings as per your preference for flavors.
