Description

A comforting and easy butternut squash soup that supports digestive health.


Ingredients

Scale
  • 1 medium butternut squash (peeled, cubed)
  • 1 yellow onion (chopped)
  • 2 garlic cloves (minced)
  • 3 cups veggie broth
  • 1 tsp olive oil
  • Pinch of ginger (fresh or powdered)
  • Salt and pepper to taste

Instructions

  1. Toss squash, onion, and garlic in a pot with olive oil. Stir and let cozy for a few minutes.
  2. Pour in the veggie broth and add ginger.
  3. Bring to a simmer and cook for about 20 minutes until squash is fork-soft.
  4. Blend until smooth, season to taste, and serve.

Notes
