Ingredients

- 1 cup all-purpose flour
- 2 tablespoons sugar (or brown sugar)
- Pinch of salt
- 2 teaspoons baking powder
- 1 egg
- 1 cup milk (whole or almond)
- 2 tablespoons melted butter or neutral oil
Instructions
- In a bowl, combine all the dry ingredients: flour, sugar, salt, and baking powder.
- In another bowl, mix together the wet ingredients: egg, milk, and melted butter or oil.
- Pour the wet mixture into the dry ingredients and mix until just combined, leaving some lumps.
- Heat a pan or griddle on medium and add butter if desired.
- Scoop out about a quarter cup of batter for each pancake.
- Cook until bubbles pop on the surface, then flip and cook for another minute until golden brown.
- Serve warm with toppings of your choice.
Notes
Don’t over-mix the batter; a few lumps are okay for soft pancakes.
