Description

A refreshing fruit pizza made with a homemade sugar cookie crust topped with creamy honey Greek yogurt and vibrant seasonal fruits.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups full-fat Greek yogurt
  • 2 tablespoons honey
  • 1 cup mixed fresh fruits (strawberries, kiwi, blueberries, etc.)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until smooth.
  3. Add the egg and vanilla extract, mixing well.
  4. Gradually add the flour and salt to form a dough.
  5. Chill the dough for 30 minutes.
  6. Roll the dough out on parchment paper into an oval shape, about 1/2 inch thick.
  7. Bake for 12-15 minutes or until lightly golden at the edges.
  8. Let the crust cool completely.
  9. Mix the Greek yogurt and honey in a bowl until smooth.
  10. Spread the Greek yogurt mixture evenly over the cooled crust.
  11. Decorate with fresh fruits in your desired pattern.
  12. Chill briefly before serving.
