A refreshing fruit pizza made with a homemade sugar cookie crust topped with creamy honey Greek yogurt and vibrant seasonal fruits.

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/2 cups full-fat Greek yogurt
- 2 tablespoons honey
- 1 cup mixed fresh fruits (strawberries, kiwi, blueberries, etc.)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar until smooth.
- Add the egg and vanilla extract, mixing well.
- Gradually add the flour and salt to form a dough.
- Chill the dough for 30 minutes.
- Roll the dough out on parchment paper into an oval shape, about 1/2 inch thick.
- Bake for 12-15 minutes or until lightly golden at the edges.
- Let the crust cool completely.
- Mix the Greek yogurt and honey in a bowl until smooth.
- Spread the Greek yogurt mixture evenly over the cooled crust.
- Decorate with fresh fruits in your desired pattern.
- Chill briefly before serving.
