- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup marshmallow fluff or softened marshmallow mixture
- 1/2 cup crushed graham crackers (optional)
- Flaky sea salt for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Add the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until fully combined.
- Chill the dough in the refrigerator for at least 30 minutes.
- Roll out the chilled dough on a floured surface, spread a thin layer of marshmallow fluff over it, and then roll it up like a jelly roll.
- Chill the rolled dough for another 15 minutes before slicing it into cookies.
- Place the cookie slices on a baking sheet and bake for 10-12 minutes, adding small pieces of marshmallow to the center of each cookie ball 5-7 minutes before they are done.
- Remove from oven and sprinkle with flaky sea salt if desired.
- Let cool on a wire rack before serving.
Notes
For added flavor, experiment by adding a pinch of cinnamon or espresso powder to the cookie dough.
