Description

Delightful handmade cookies with a rich chocolate base and gooey marshmallow swirls, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup marshmallow fluff or softened marshmallow mixture
  • 1/2 cup crushed graham crackers (optional)
  • Flaky sea salt for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until fully combined.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. Roll out the chilled dough on a floured surface, spread a thin layer of marshmallow fluff over it, and then roll it up like a jelly roll.
  8. Chill the rolled dough for another 15 minutes before slicing it into cookies.
  9. Place the cookie slices on a baking sheet and bake for 10-12 minutes, adding small pieces of marshmallow to the center of each cookie ball 5-7 minutes before they are done.
  10. Remove from oven and sprinkle with flaky sea salt if desired.
  11. Let cool on a wire rack before serving.

Notes

For added flavor, experiment by adding a pinch of cinnamon or espresso powder to the cookie dough.
