Description

Delicious and nutritious muffins made with ripe bananas and oats, offering a healthy start to your day.


Ingredients

  • 3 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup almond milk (or other milk alternative)
  • 1/4 cup maple syrup (or honey)
  • 1/4 cup coconut oil (melted)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/4 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mash the ripe bananas until smooth.
  3. Add almond milk, maple syrup, melted coconut oil, and vanilla extract to the bananas and mix well.
  4. In another bowl, combine rolled oats, baking soda, baking powder, salt, and cinnamon.
  5. Gently fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.
  6. If using, fold in chopped nuts or chocolate chips.
  7. Line a muffin tin with liners or grease it, and pour the batter evenly into each cup.
  8. Bake for 5 minutes at 425°F, then reduce the temperature to 375°F and bake for an additional 15-20 minutes until a toothpick comes out clean.
  9. Let cool before serving.

Notes

Use very ripe bananas for the best sweetness and flavor. You can substitute almond milk with any milk of your choice.
