- 3 ripe bananas
- 1 cup rolled oats
- 1/2 cup almond milk (or other milk alternative)
- 1/4 cup maple syrup (or honey)
- 1/4 cup coconut oil (melted)
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon (optional)
- 1/4 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, mash the ripe bananas until smooth.
- Add almond milk, maple syrup, melted coconut oil, and vanilla extract to the bananas and mix well.
- In another bowl, combine rolled oats, baking soda, baking powder, salt, and cinnamon.
- Gently fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.
- If using, fold in chopped nuts or chocolate chips.
- Line a muffin tin with liners or grease it, and pour the batter evenly into each cup.
- Bake for 5 minutes at 425°F, then reduce the temperature to 375°F and bake for an additional 15-20 minutes until a toothpick comes out clean.
- Let cool before serving.
Notes
Use very ripe bananas for the best sweetness and flavor. You can substitute almond milk with any milk of your choice.
