- 1 cup plain Greek yogurt
- 1 scoop protein powder (whey or plant-based)
- 1 cup whole wheat flour (or gluten-free flour)
- 1 cup fresh or frozen blueberries
- 1/4 cup natural sweetener (honey or maple syrup)
- 1 tsp baking powder
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners.
- In a bowl, combine dry ingredients (flour, protein powder, baking powder).
- In another bowl, mix wet ingredients (Greek yogurt, sweetener, vanilla).
- Gently fold wet ingredients into dry ingredients until just combined; do not overmix.
- Add blueberries and gently fold them into the batter.
- Spoon batter into muffin tin and bake for 20-25 minutes until golden brown.
- Check doneness with a toothpick. Allow to cool before enjoying.
