Description

A fresh and colorful salad featuring roasted beets, creamy goat cheese, and crunchy walnuts, perfect for any occasion.


Ingredients

Scale
  • 2 medium beets (red, golden, or both)
  • 4 oz soft goat cheese
  • 1/2 cup walnuts (or pecans)
  • 2 tbsp olive oil
  • 4 cups mixed greens (arugula, spinach, or others)
  • Juice of 1 lemon or 2 tbsp balsamic vinegar
  • Pinch of salt
  • Crack of black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub the beets, wrap them in foil, and roast until fork-soft, about 45-60 minutes.
  3. Let the beets cool, then rub off the skins and slice or dice them.
  4. In a large bowl, combine the greens and layer the roasted beet pieces on top.
  5. Sprinkle chunks of goat cheese over the salad.
  6. Top with walnuts and drizzle with olive oil and lemon juice or balsamic vinegar.
  7. Season with salt and pepper to taste.
