Ingredients

- 2 medium beets (red, golden, or both)
- 4 oz soft goat cheese
- 1/2 cup walnuts (or pecans)
- 2 tbsp olive oil
- 4 cups mixed greens (arugula, spinach, or others)
- Juice of 1 lemon or 2 tbsp balsamic vinegar
- Pinch of salt
- Crack of black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Scrub the beets, wrap them in foil, and roast until fork-soft, about 45-60 minutes.
- Let the beets cool, then rub off the skins and slice or dice them.
- In a large bowl, combine the greens and layer the roasted beet pieces on top.
- Sprinkle chunks of goat cheese over the salad.
- Top with walnuts and drizzle with olive oil and lemon juice or balsamic vinegar.
- Season with salt and pepper to taste.
