- 3–4 very ripe bananas
- 1/2 cup melted butter
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 tablespoon cinnamon
- 1 tablespoon sugar (for the swirl)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mash the bananas in a bowl using a fork or potato masher until mostly smooth with some lumps remaining.
- Mix in melted butter, then add sugar, egg, and vanilla extract, stirring until combined.
- Sprinkle baking soda and salt over the mixture and gently mix in.
- Add flour and stir until just combined; do not overmix.
- In a separate bowl, mix cinnamon and sugar for the swirl.
- Pour half of the batter into the prepared loaf pan, followed by a layer of cinnamon-sugar mix, then the remaining batter.
- Use a butter knife to gently swirl through the batter, creating a marbled effect.
- Bake for 60 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
Notes
Allow the bread to cool completely before storing. Wrap in foil or store in a resealable container for best freshness.
