Description

A creamy, dreamy spread that combines the earthy sweetness of pumpkin with rich peanut flavor, perfect for autumn.


Ingredients

Scale
  • 2 cups raw, unsalted peanuts
  • 1/2 cup pumpkin puree
  • 12 tablespoons maple syrup or honey (optional)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Spread peanuts on a baking sheet and roast for 10-12 minutes until golden brown.
  2. Let peanuts cool slightly, then transfer to a food processor.
  3. Blend until creamy, scraping down the sides as necessary (about 5-10 minutes).
  4. Add pumpkin puree, spices, and sweetener (if using) and blend until fully incorporated.
  5. Transfer to an airtight jar and refrigerate for 1-2 weeks.

Notes

For a chunkier texture, reserve some peanuts before blending. This peanut butter can also be adapted for dogs by omitting sweeteners.
