Description

Ingredients

Scale
  • 2 cups lean ground beef or chicken
  • 1 cup sweet potatoes, diced
  • 1 cup pumpkin puree
  • 1/2 cup blueberries
  • 1/2 cup lentils
  • 1 tablespoon olive oil
  • 2 cups water

Instructions

  1. In a large pot, combine the ground meat and olive oil over medium heat.
  2. Add the diced sweet potatoes and cook for about 5 minutes.
  3. Stir in the pumpkin puree and blueberries.
  4. Add the lentils and water, bringing the mixture to a boil.
  5. Reduce heat and let it simmer for 20 minutes, or until the sweet potatoes are tender and the lentils are cooked.
