Description

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • Fresh fruits (strawberries, kiwis, blueberries, etc.)
  • Apricot preserves or sugar-water for glaze

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until smooth.
  4. Add the egg and vanilla extract, mixing until combined.
  5. Gradually add the flour mixture, mixing until a dough forms.
  6. Chill the dough for at least an hour.
  7. Roll out the dough and cut into egg shapes using a cutter.
  8. Bake for 10-12 minutes or until slightly golden.
  9. Let the cookies cool completely.
  10. In a separate bowl, beat cream cheese and powdered sugar until smooth.
  11. Frost each cookie with the cream cheese mixture.
  12. Top with fresh fruits, decorating as desired.
  13. Brush with apricot glaze for shine and to keep the fruit fresh.
