Description

A delightful homemade treat that combines sweet peaches and crunchy pistachios, perfect for breakfast or brunch.


Ingredients

Scale
  • Puff pastry (store-bought)
  • Ripe peaches, sliced
  • Shelled pistachios, roughly chopped
  • Sugar
  • Vanilla extract (optional)
  • 1 egg (for brushing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry slightly and cut into squares.
  3. Toss the sliced peaches with sugar and vanilla.
  4. Lay the pastry squares on a baking sheet and pile a small heap of peaches in the center of each square.
  5. Sprinkle chopped pistachios on top.
  6. Fold the pastry edges up slightly to contain the juices.
  7. Brush the edges with beaten egg.
  8. Bake for 15-18 minutes or until puffed and golden.
  9. Let cool for a couple of minutes before serving.

Notes

If your peaches are very juicy, let them drain on a paper towel to prevent sogginess. For leftovers, use a toaster oven instead of a microwave to reheat.
