Description

Deliciously moist pumpkin bars topped with creamy frosting, perfect for any fall occasion.


Ingredients

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup pure pumpkin puree
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix together eggs, sugar, oil, and pumpkin until well combined.
  3. In another bowl, combine flour, baking powder, cinnamon, nutmeg, cloves, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick comes out clean.
  7. Allow the bars to cool completely before frosting.
  8. To make the frosting, beat together cream cheese and butter until smooth; add vanilla and powdered sugar, mixing until creamy.
  9. Spread the frosting over the cooled pumpkin bars and slice to serve.

Notes

For extra flavor, add toasted pecans or chocolate chips. Frosting can be topped with a sprinkle of cinnamon or caramel drizzle for added flair.
