Description

Ingredients

  • 4 slices thick bread (challah or brioche preferred)
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup canned pumpkin (not pie filling)
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 2 tablespoons butter (for frying)

Instructions

  1. In a mixing bowl, whisk together the eggs, milk, pumpkin, sugar, vanilla, and pumpkin pie spice until smooth.
  2. Dip each slice of bread into the batter, allowing it to soak briefly.
  3. Heat the butter in a pan until it sizzles.
  4. Fry each slice of soaked bread in the pan until golden brown on both sides.
  5. Keep cooked French toast warm in the oven while frying the remaining slices.

Notes

For richer flavor, use half and half instead of milk. You can add chocolate chips or walnuts, or use gluten-free bread if preferred.
