Ingredients

- 1 lb ground turkey
- 2 tbsp oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups mixed vegetables (bell peppers, zucchini, carrots, snap peas)
- 3 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp ginger, grated
- Salt and pepper to taste
Instructions
- Heat oil in a big skillet or wok over medium heat.
- Add ground turkey and stir to break it up; cook until browned.
- Add chopped onions and garlic; cook until fragrant.
- Pile in your mixed vegetables and stir in soy sauce, sesame oil, and ginger.
- Cook until the vegetables are tender but still crisp.
- Serve hot, either straight from the pan or over rice.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of water or soy sauce if needed.
