Description

A colorful and healthy dish that’s perfect for busy weeknights—fast, easy, and never boring.


Ingredients

  • 1 lb ground turkey
  • 2 tbsp oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots, snap peas)
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat oil in a big skillet or wok over medium heat.
  2. Add ground turkey and stir to break it up; cook until browned.
  3. Add chopped onions and garlic; cook until fragrant.
  4. Pile in your mixed vegetables and stir in soy sauce, sesame oil, and ginger.
  5. Cook until the vegetables are tender but still crisp.
  6. Serve hot, either straight from the pan or over rice.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of water or soy sauce if needed.
