- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup seedless raspberry jam
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add vanilla extract and mix well.
- In a separate bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Chill the dough for at least 30 minutes in the refrigerator.
- Roll out the chilled dough into a rectangle on a floured surface.
- Spread a thin, even layer of raspberry jam over the dough, leaving a small border around the edges.
- Carefully roll the dough into a tight log and chill again for 30 minutes.
- Slice the log into rounds and place on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are just lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
