Description

Delightful sugar cookies with a vibrant raspberry jam swirl, perfect for sharing love on Valentine’s Day.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup seedless raspberry jam
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add vanilla extract and mix well.
  4. In a separate bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. Chill the dough for at least 30 minutes in the refrigerator.
  6. Roll out the chilled dough into a rectangle on a floured surface.
  7. Spread a thin, even layer of raspberry jam over the dough, leaving a small border around the edges.
  8. Carefully roll the dough into a tight log and chill again for 30 minutes.
  9. Slice the log into rounds and place on a baking sheet lined with parchment paper.
  10. Bake for 10-12 minutes or until the edges are just lightly golden.
  11. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
