Ingredients

- 2 cups whole milk
- 1/2 cup heavy cream
- 4 oz high-quality dark chocolate (60-70% cacao), chopped
- 2 tablespoons cocoa powder
- 2 tablespoons granulated sugar
- 1 tablespoon brown sugar
- 1/4 teaspoon cinnamon (optional)
- Pinch of sea salt
- Vanilla bean pod (optional)
Instructions
- In a small saucepan, whisk cocoa powder and sugars together.
- Add a small amount of milk to create a thick paste.
- Over medium-low heat, add the remaining milk and chopped chocolate, whisking constantly.
- Heat gently until chocolate is melted and mixture is smooth, being careful not to boil.
- If using, add spices or vanilla pod to infuse flavor, steeping off heat for 10-15 minutes.
- Strain through a fine-mesh sieve for a smooth texture.
Notes
For a richer flavor, use a mix of whole milk and cream. Adjust sweetness to taste.
