Ingredients

- 4 whole quail (about palm-sized each)
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp olive oil or sesame oil
- 2 garlic cloves, smashed
- 1 tsp ginger (fresh or powdered)
- Pinch of black pepper
- Splash of rice vinegar or lemon juice
Instructions
- Mix soy sauce, honey, oil, garlic, ginger, pepper, and vinegar in a small bowl.
- Rub the quail all over with the mixture.
- Cover and marinate at least 30 minutes (or up to overnight).
- Preheat the oven to 425°F.
- Set quail on a rack or baking pan lined with foil.
- Brush with extra marinade and roast for 15-20 minutes, flipping once.
- Let them rest before serving.
