Description

A fancy yet simple dinner of Lacquered Quail, featuring a sticky, sweet-savory glaze that caramelizes beautifully in the oven.


Ingredients

Scale
  • 4 whole quail (about palm-sized each)
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp olive oil or sesame oil
  • 2 garlic cloves, smashed
  • 1 tsp ginger (fresh or powdered)
  • Pinch of black pepper
  • Splash of rice vinegar or lemon juice

Instructions

  1. Mix soy sauce, honey, oil, garlic, ginger, pepper, and vinegar in a small bowl.
  2. Rub the quail all over with the mixture.
  3. Cover and marinate at least 30 minutes (or up to overnight).
  4. Preheat the oven to 425°F.
  5. Set quail on a rack or baking pan lined with foil.
  6. Brush with extra marinade and roast for 15-20 minutes, flipping once.
  7. Let them rest before serving.
