Description

Ingredients

  • Fresh eggs
  • Soft tortillas
  • Shredded cheese (cheddar or pepper jack)
  • Cooked breakfast sausage or crumbled bacon
  • Onions, diced
  • Diced peppers
  • Salsa or hot sauce
  • Half avocado (optional)
  • Black beans (optional for protein)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a sheet pan with nonstick spray.
  2. Lay out your tortillas on the sheet pan, overlapping if necessary.
  3. Whisk the eggs with salt, pepper, and garlic powder, then pour over the tortillas.
