Description

Juicy chicken thighs marinated in a sweet and spicy peach preserve and chili sauce mixture, perfect for grilling.


Ingredients

  • 6 boneless, skinless chicken thighs
  • 1/2 cup peach preserves
  • 1/3 cup sweet chili sauce
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Splash of soy sauce
  • Optional: red pepper flakes

Instructions

  1. In a big bowl, combine peach preserves, sweet chili sauce, lime juice, garlic, soy sauce, salt, and pepper. Stir until mixed.
  2. Add chicken thighs to the bowl, ensuring they are well coated, and marinate for at least 15 minutes (longer if possible).
  3. Preheat your grill to medium-high and oil the grates.
  4. Place the chicken thighs on the grill and cook for 6-7 minutes per side, basting with leftover marinade midway.
  5. Remove from grill when cooked through and caramelized on the edges, and let rest for 5 minutes before serving.

Notes

Serve with chopped green onions, grilled corn, or potato salad. Leftovers taste even better the next day.
