Juicy chicken thighs marinated in a sweet and spicy peach preserve and chili sauce mixture, perfect for grilling.

- 6 boneless, skinless chicken thighs
- 1/2 cup peach preserves
- 1/3 cup sweet chili sauce
- Juice of 1 lime
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Splash of soy sauce
- Optional: red pepper flakes
Instructions
- In a big bowl, combine peach preserves, sweet chili sauce, lime juice, garlic, soy sauce, salt, and pepper. Stir until mixed.
- Add chicken thighs to the bowl, ensuring they are well coated, and marinate for at least 15 minutes (longer if possible).
- Preheat your grill to medium-high and oil the grates.
- Place the chicken thighs on the grill and cook for 6-7 minutes per side, basting with leftover marinade midway.
- Remove from grill when cooked through and caramelized on the edges, and let rest for 5 minutes before serving.
Notes
Serve with chopped green onions, grilled corn, or potato salad. Leftovers taste even better the next day.
