Description

Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract

  • 8 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar (for frosting)
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 kiwi, sliced
  • 1/2 cup mango or pineapple, diced
  • Apricot preserves (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together butter and sugars, then mix in the egg and vanilla.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture until a dough forms.
  5. Roll the dough into a large oval shape on parchment paper.
  6. Bake for 15-20 minutes or until golden brown around the edges.
  7. Let the cookie base cool completely.
  8. In a separate bowl, beat cream cheese and heavy cream until fluffy, add powdered sugar, and mix well.
  9. Spread the cream cheese frosting evenly over the cooled cookie crust.
  10. Arrange the fresh fruit artistically on top.
  11. Brush apricot preserves over the fruit for shine and preservation.

Notes

Chill the dough for better shape retention during baking. Pat fruit dry before decorating to prevent bleeding colors.
