Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together butter and sugars, then mix in the egg and vanilla.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture until a dough forms.
- Roll the dough into a large oval shape on parchment paper.
- Bake for 15-20 minutes or until golden brown around the edges.
- Let the cookie base cool completely.
- In a separate bowl, beat cream cheese and heavy cream until fluffy, add powdered sugar, and mix well.
- Spread the cream cheese frosting evenly over the cooled cookie crust.

- Brush apricot preserves over the fruit for shine and preservation.
