- 1/2 cup chopped pecans or walnuts (optional)
- 8 oz cream cheese, softened
- 1/2 cup powdered erythritol or preferred sweetener
- 1 cup heavy whipping cream
- 1/4 cup unsweetened cocoa powder
- 1/2 cup sugar-free chocolate chips (optional)
- 1 tsp pure vanilla extract
Instructions
- Preheat oven and mix almond flour, melted butter, and nuts, then press into a baking pan.
- Bake for about 12 minutes until light brown at the edges.
- Cool the crust; for faster cooling, place in the freezer.
- Blend softened cream cheese with sweetener and spread over the cooled crust.
- Whip heavy cream with cocoa powder and additional sweetener until thick, then spread over the cream cheese.
- Top with more whipped cream, nuts, or chocolate chips if desired.
- Refrigerate for at least three hours or overnight before serving.
Notes
For best results, use room-temperature cream cheese and chill layers between steps to avoid melting.
