Description

Ingredients

  • 1 cup almond flour
  • 1/2 cup butter, melted
  • 1/2 cup chopped pecans or walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered erythritol or preferred sweetener
  • 1 cup heavy whipping cream
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup sugar-free chocolate chips (optional)
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven and mix almond flour, melted butter, and nuts, then press into a baking pan.
  2. Bake for about 12 minutes until light brown at the edges.
  3. Cool the crust; for faster cooling, place in the freezer.
  4. Blend softened cream cheese with sweetener and spread over the cooled crust.
  5. Whip heavy cream with cocoa powder and additional sweetener until thick, then spread over the cream cheese.
  6. Top with more whipped cream, nuts, or chocolate chips if desired.
  7. Refrigerate for at least three hours or overnight before serving.

Notes

For best results, use room-temperature cream cheese and chill layers between steps to avoid melting.
