Description

A delightful combination of fresh blackberries and floral Earl Grey tea that creates comforting treats for any occasion.


Ingredients

  • 1 cup fresh blackberries
  • 2 tablespoons Earl Grey tea leaves
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Juice of 1 lemon
  • Honey, for sweetening (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small saucepan, heat the milk and steep the Earl Grey tea leaves for about 10 minutes. Strain the milk and set aside.
  3. In a mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Add in the eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the infused milk until just combined.
  7. Gently fold in the blackberries and lemon juice.
  8. Pour the batter into a greased loaf pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before serving. Optionally, drizzle with a Blackberry & Earl Grey syrup.

Notes

For an added touch, use honey as a sweetener for a more floral flavor.
