A delightful combination of fresh blackberries and floral Earl Grey tea that creates comforting treats for any occasion.

- 1 cup fresh blackberries
- 2 tablespoons Earl Grey tea leaves
- 1 cup milk
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup butter, softened
- 2 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Juice of 1 lemon
- Honey, for sweetening (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a small saucepan, heat the milk and steep the Earl Grey tea leaves for about 10 minutes. Strain the milk and set aside.
- In a mixing bowl, cream the butter and sugar together until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the infused milk until just combined.
- Gently fold in the blackberries and lemon juice.
- Pour the batter into a greased loaf pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving. Optionally, drizzle with a Blackberry & Earl Grey syrup.
Notes
For an added touch, use honey as a sweetener for a more floral flavor.
