Description

Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 1/2 cup fresh blueberries
  • 1 tablespoon maple syrup or honey (optional)
  • 1/2 teaspoon cinnamon (optional)
  • 1 teaspoon vanilla extract (optional)
  • Crunchy toppings (granola, nuts, cacao nibs) optional

Instructions

  1. In a mason jar, combine chia seeds and almond milk. Stir well to prevent clumping.
  2. Add maple syrup, cinnamon, and vanilla if desired. Whisk again for one minute.
  3. Seal the jar and refrigerate overnight to allow the chia seeds to expand.
  4. In the morning, stir the pudding and top with fresh blueberries and any crunchy toppings of your choice.
