- 1/2 cup chia seeds
- 2 cups almond milk (or your preferred milk)
- 1/4 cup maple syrup or honey
- 1 cup fresh or frozen strawberries
- 1 tsp vanilla extract
Instructions
- In a bowl, whisk together chia seeds, almond milk, maple syrup, and vanilla extract until well combined.
- Let the mixture sit for 5 minutes, then whisk again to avoid clumping. Repeat this step a couple of times.
- Refrigerate the mixture for at least 4 hours, or overnight, to allow it to thicken.
- In a saucepan, heat strawberries over medium heat until they break down into a puree, about 5-7 minutes. Sweeten if desired.
- Once the chia pudding has set, layer it in a bowl with the strawberry puree on top before serving.
Notes
Store in airtight containers in the refrigerator for up to five days. Keep the puree separate to maintain freshness.
