- 1 onion, chopped
- 2 cups medium shells or cavatappi pasta
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon Worcestershire sauce
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Pinch of cayenne pepper
- Salt and pepper to taste
- Cilantro or green onions for garnish
Instructions
- In a large pot, brown the ground beef and onion over medium heat until cooked through.
- Add Worcestershire sauce, tomato paste, and spices; cook for another 2 minutes, allowing the flavors to bloom.
- Stir in the beef broth and pasta, cover, and bring to a boil.
- Reduce heat and simmer until pasta is al dente, about 10-12 minutes.
- Remove the pot from heat and stir in shredded cheese and sour cream until melted and creamy.
- Serve immediately, garnished with chopped cilantro or green onions.
Notes
For the best cheese sauce, always shred cheese from a block and avoid pre-shredded versions. Adjust seasonings based on your heat preference.
