Description

A warm and comforting dish that combines creamy cheese with earthy spinach and garlic for an elevated yet accessible comfort food.


Ingredients

  • 8 oz elbow macaroni
  • 2 cups fresh baby spinach
  • 2 cups sharp cheddar cheese, grated
  • 1 cup Gruyère cheese, grated
  • 1/2 cup cream cheese
  • 1/2 cup milk
  • 1/2 cup Parmesan cheese, grated
  • 4 cloves garlic, roasted
  • 1 tablespoon olive oil
  • 1 teaspoon mustard powder
  • 1/4 teaspoon nutmeg
  • 1 cup Panko breadcrumbs
  • 2 tablespoons butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook macaroni according to package instructions and drain.
  3. In a skillet, heat olive oil over medium heat and sauté spinach until wilted, then squeeze out excess moisture.
  4. In a large saucepan, combine milk and roasted garlic, heating gently.
  5. Mix in the cheddar, Gruyère, cream cheese, and spices until melted and smooth.
  6. Combine the cooked macaroni, wilted spinach, and cheese sauce in a large bowl.
  7. Transfer to a baking dish.
  8. Mix Panko breadcrumbs with melted butter and sprinkle over the top.
  9. Bake for 25-30 minutes or until golden on top.
  10. Let sit for a few minutes before serving.

Notes

Grate your own cheese for the best meltability. Adjust garlic levels based on your preference for richness.
