- 8 oz elbow macaroni
- 2 cups fresh baby spinach
- 2 cups sharp cheddar cheese, grated
- 1 cup Gruyère cheese, grated
- 1/2 cup cream cheese
- 1/2 cup milk
- 1/2 cup Parmesan cheese, grated
- 4 cloves garlic, roasted
- 1 tablespoon olive oil
- 1 teaspoon mustard powder
- 1/4 teaspoon nutmeg
- 1 cup Panko breadcrumbs
- 2 tablespoons butter, melted
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook macaroni according to package instructions and drain.
- In a skillet, heat olive oil over medium heat and sauté spinach until wilted, then squeeze out excess moisture.
- In a large saucepan, combine milk and roasted garlic, heating gently.
- Mix in the cheddar, Gruyère, cream cheese, and spices until melted and smooth.
- Combine the cooked macaroni, wilted spinach, and cheese sauce in a large bowl.
- Transfer to a baking dish.
- Mix Panko breadcrumbs with melted butter and sprinkle over the top.
- Bake for 25-30 minutes or until golden on top.
- Let sit for a few minutes before serving.
Notes
Grate your own cheese for the best meltability. Adjust garlic levels based on your preference for richness.
