Description

Ingredients

  • 1 lb chicken, diced
  • 2 cups rice
  • 1 can pineapple chunks
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 garlic cloves, minced
  • 1 tablespoon ginger paste
  • 2 tablespoons toasted sesame oil
  • 1 bell pepper, diced
  • 1 cup snap peas
  • 1 carrot, sliced
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pan, heat sesame oil over medium-high heat and sear the chicken until golden.
  3. Add garlic, ginger, and vegetables; stir-fry for 2-3 minutes.
  4. Mix in the rice, pineapple chunks, soy sauce, and rice vinegar.
  5. Pour in enough water to cover the rice and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender.
  7. Let sit covered for 10 minutes before serving.

Notes
